This is my first sourdough bread at home. Okay-second. But first try to forget, a person who was a witness, has promised to keep quiet:)
recipe I found in Dorotuś . What can I say? It is brilliant!

leaven zakwasowy:
190 g wholemeal rye starter
220 g rye flour
160 g of water

dough appropriate:
all earlier leaven
300 g of water
400 g of wheat flour bread
95 g wheat flour wholemeal
0.5 - 4 g of yeast (I gave 3 g)
12 g of salt

Ingredients zakwasowego grout mix thoroughly and leave covered for 4 hours in a warm place (32 degrees C).
loose and knead sticky dough, put into a larger bowl and leave to double in volume (1.5 hours at 25 º C). The dough is divided into two parts, each piece will form the bread (rolling in a roll). Put into prepared plaques and allowed to ferment for 60 - 90 minutes.
Dorotuś proposes burning in the decreasing temperature (heat the oven to 260 º C and bake for 20 minutes, then reduce to 240 º C and bake for another 20 minutes, reduce to 220 º C and bake for another 20 minutes), I baked 220 maintaining ° C about half an hour.
